- While the chicken is baking, combine the mayo, plain Greek yogurt, lemon juice, white vinegar, sugar, celery seed, salt, and black pepper in a bowl. Mix until smooth and creamy.
- Gently heat the soft shell tacos in a pan or microwave until they are warm and pliable.
- Start with a generous layer of shredded cabbage or slaw mix in each taco. Top with crispy chicken tenders, drizzle with sauce, and sprinkle with cheddar cheese, avocado, and scallions.
- Just before serving, drizzle each taco with honey and a splash of Sriracha.
