How to Make Hearty Vegan White Bean Soup
  1. Heat a large pot over medium heat and add the olive oil. Let it warm for about a minute.
  2. Sauté the chopped sweet onion until it's softened and translucent, about 3-4 minutes.
  3. Stir in the minced garlic, sliced carrots, and chopped celery. Cook for another 3-5 minutes.
  4. Combine the drained cannellini beans with 4 cups of vegetable broth, tomato paste, Italian seasoning, red chili flakes, black pepper, and salt.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for about 15 minutes.
  6. Add the chopped kale or baby spinach and cook just until wilted, about 2-3 minutes.
  7. Finish by stirring in the lemon juice just before serving.
