Preparation
- Melt the dark chocolate and coconut oil together in a small saucepan over low heat. Stir until smooth and glossy, about 3-5 minutes. Be sure to remove from heat before it becomes too hot!
- Combine by adding 3 tablespoons of maple syrup, ground almonds, and puffed quinoa into the melted chocolate mixture. Mix until everything is well incorporated and forms a thick base.
- Blend the soaked cashew nuts with 2 tablespoons of instant coffee that you've dissolved in hot water. Add the remaining maple syrup, coconut oil, coconut cream, and vanilla to the blender. Blend until completely smooth and creamy, resembling a rich mousse.
- Layer the almond mixture into your chosen mold, pressing it down firmly. Then, add a layer of the creamy cashew mixture on top, smoothing it evenly. Repeat if desired!
- Refrigerate the layered bites for several hours or until set, ideally overnight for the best texture.
- Drizzle with melted dark chocolate before serving, adding that luxurious final touch to your beautiful bites.
