- Preheat the oven to 400°F. This temperature is ideal for steaming the fish to perfection while ensuring the vegetables remain crisp and vibrant.
- Lay out the parchment paper on a baking sheet. This will serve as your cooking vessel, trapping all the delicious flavors inside.
- Place the baby bok choy, red bell pepper, and shallot in the center of each parchment sheet. Arrange the vegetables like a cozy nest for the halibut to rest atop.
- Add the halibut fillets on top of the colorful vegetables. Make sure they’re centered so they cook evenly and soak up all that flavor.
- Mix together lime zest, kosher salt, black pepper, green curry paste, coconut milk, and tamari in a bowl until smooth.
- Pour the mixture evenly over the halibut and vegetables.
- Fold the parchment paper to seal the parcels tightly.
- Bake in the oven for 25 minutes. You'll know it’s done when the fish flakes easily and the vegetables are tender yet still bright.
- Open the parcels carefully, as steam will escape. Garnish with fresh Thai basil and/or cilantro for an aromatic finish.
