Method
 

Cooking Instructions
  1. Preheat the oven to 400°F. This temperature is ideal for steaming the fish to perfection while ensuring the vegetables remain crisp and vibrant.
  2. Lay out the parchment paper on a baking sheet. This will serve as your cooking vessel, trapping all the delicious flavors inside.
  3. Place the baby bok choy, red bell pepper, and shallot in the center of each parchment sheet. Arrange the vegetables like a cozy nest for the halibut to rest atop.
  4. Add the halibut fillets on top of the colorful vegetables. Make sure they’re centered so they cook evenly and soak up all that flavor.
  5. Mix together lime zest, kosher salt, black pepper, green curry paste, coconut milk, and tamari in a bowl until smooth.
  6. Pour the mixture evenly over the halibut and vegetables.
  7. Fold the parchment paper to seal the parcels tightly.
  8. Bake in the oven for 25 minutes. You'll know it’s done when the fish flakes easily and the vegetables are tender yet still bright.
  9. Open the parcels carefully, as steam will escape. Garnish with fresh Thai basil and/or cilantro for an aromatic finish.
