- Peel and cut the floury potatoes into thick fries, about ½ inch thick.
- Soak the cut potatoes in cold water and white vinegar for at least 30 minutes.
- Drain the potatoes well and thoroughly dry them with a kitchen towel.
- Heat the oil to 325°F (163°C) in a deep pan or fryer.
- Add the potatoes in batches to the hot oil and fry until cooked through, about 5-6 minutes.
- Remove them and let drain on paper towels.
- Increase the oil temperature to 375°F (190°C).
- Fry the potatoes again until golden and crispy, about 3-4 minutes.
- Remove from oil and season with kosher salt and additional salt to taste.
