  • 4 large floury potatoes for ideal texture
  • 2 tablespoons white vinegar to enhance crispiness and prevent discoloration
  • 1 tablespoon kosher salt adds savory flavor
  • canola or vegetable oil as needed for frying

Method
 

Instructions
  1. Peel and cut the floury potatoes into thick fries, about ½ inch thick.
  2. Soak the cut potatoes in cold water and white vinegar for at least 30 minutes.
  3. Drain the potatoes well and thoroughly dry them with a kitchen towel.
  4. Heat the oil to 325°F (163°C) in a deep pan or fryer.
  5. Add the potatoes in batches to the hot oil and fry until cooked through, about 5-6 minutes.
  6. Remove them and let drain on paper towels.
  7. Increase the oil temperature to 375°F (190°C).
  8. Fry the potatoes again until golden and crispy, about 3-4 minutes.
  9. Remove from oil and season with kosher salt and additional salt to taste.
