Directions
  1. Prepare the coconut rice according to package instructions.
  2. Heat olive oil in a pan over medium heat.
  3. Sauté scallions, garlic, and ginger in the pan for 2-3 minutes until fragrant.
  4. Brown the ground pork in the pan for about 5-7 minutes.
  5. Mix in the light brown sugar, lime juice, sriracha, sea salt, and black pepper; cook for another 3-4 minutes.
  6. Serve the pork over coconut rice, garnished with chopped peanuts, lime wedges, and fresh herbs.
