Method
 

Directions
  1. Preheat the oven to 350°F (175°C) and lightly grease your baking pan.
  2. Combine the all-purpose flour, ground cinnamon, baking soda, and kosher salt in a mixing bowl.
  3. Beat the eggs and sugar in another bowl until well mixed and slightly frothy.
  4. Add the canola oil and vanilla extract to your egg mixture, blending until smooth.
  5. Fold in the dry ingredients gently until just combined.
  6. Stir in the diced apples and pecans, making sure they’re evenly distributed.
  7. Pour the batter into the prepared baking pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for about 50 minutes, or until a toothpick comes out clean.
  9. Cool the cake in the pan for a few minutes, then transfer to a wire rack.
  10. Prepare the frosting by beating together cream cheese, butter, confectioners' sugar, and ground cinnamon until smooth.
