Method
 

Directions
  1. Preheat the oven to 350°F (175°C).
  2. Combine the plain flour and self-raising flour in a mixing bowl.
  3. Add the butter and caster sugar to the flour mix, then blend until crumbly.
  4. Stir in the egg yolks, vanilla essence, almond essence, cinnamon, and cardamom.
  5. Mix in the finely grated lemon or orange zest.
  6. Form the dough into your desired shape.
  7. Roll out the marzipan and cut it into shapes that will fit on top of your dough.
  8. Assemble the almond fingers by placing pieces of marzipan on the formed dough.
  9. Glaze with the beaten egg.
  10. Top with almond flakes or whole almonds, pressing them gently into the dough.
  11. Bake in the preheated oven for about 30 minutes, or until they're golden brown.
