- Preheat the oven to 350°F (175°C).
- Combine the plain flour and self-raising flour in a mixing bowl.
- Add the butter and caster sugar to the flour mix, then blend until crumbly.
- Stir in the egg yolks, vanilla essence, almond essence, cinnamon, and cardamom.
- Mix in the finely grated lemon or orange zest.
- Form the dough into your desired shape.
- Roll out the marzipan and cut it into shapes that will fit on top of your dough.
- Assemble the almond fingers by placing pieces of marzipan on the formed dough.
- Glaze with the beaten egg.
- Top with almond flakes or whole almonds, pressing them gently into the dough.
- Bake in the preheated oven for about 30 minutes, or until they're golden brown.
