  • 2-3 scallions or onion sliced for sweetness

Directions
  1. Wash the chicken with lime by rinsing and squeezing lime juice over the pieces to coat.
  2. Combine spices and chicken in a bowl, mixing thoroughly to coat.
  3. Heat the vegetable oil in a large pot over medium heat.
  4. Sauté scallions or onion for 3-5 minutes until softened.
  5. Add the marinated chicken and cook until browned, about 6-8 minutes.
  6. Stir in chopped tomato and cilantro.
  7. Cover and simmer for 30-35 minutes until chicken is tender.
