How to Make Crispy Sweet Potato Latkes
  1. Peel and shred the sweet potatoes using a grater, aiming for long, thin strands.
  2. Finely grate the onion and mince the garlic clove to combine easily with the sweet potatoes.
  3. In a large bowl, combine the shredded sweet potatoes, grated onion, minced garlic, flour, garlic powder, salt, and egg. Mix until well combined.
  4. Heat olive oil in a skillet over medium heat until it shimmers.
  5. Form the mixture into small patties and fry in the hot oil for about 4-5 minutes on each side until golden brown.
  6. While frying, mix honey into Greek yogurt in a separate bowl until smooth and creamy.
  7. Once crispy, remove latkes from the skillet and drain on paper towels. Serve warm with honey yogurt dip, and sprinkle cinnamon on top.
