  • 4 pieces Whole Wheat Tortillas
  • 2 cups Potatoes Boiled and mashed
  • 1 cup Cheese Your favorite type
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 tablespoon Oil For frying
For the Cucumber Salad
  • 1 cup Cucumber Finely diced
  • 2 tablespoons Lemon Juice
  • 1/4 cup Mint Leaves Chopped

Method
 

Crispy Samosa-dillas Preparation
  1. Boil the potatoes in a pot of water for about 15 minutes, or until tender. Once cooked, drain and mash them into a creamy consistency.
  2. Mix together the mashed potatoes with cheese, cumin, and coriander in a bowl until well combined.
  3. Place a generous portion of the potato filling on one half of each tortilla. Fold the tortilla over to seal.
  4. Heat oil in a pan over medium heat. Fry the Samosa-dillas for about 3-4 minutes per side until crispy and golden brown.
Cucumber Salad Preparation
  1. Prepare the cucumber salad by mixing diced cucumber with lemon juice and chopped mint leaves.
