Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking pan with parchment paper, drizzling it lightly with avocado oil.
  2. Prepare the tofu by draining it, pressing it between paper towels to remove excess moisture, and then cutting it into bite-sized cubes or triangles.
  3. Mix the tamari, lemon juice, and apple cider vinegar in a bowl to create a zesty marinade.
  4. Combine cornstarch or flour, garlic powder, paprika, and salt in another bowl, whisking them together.
  5. Dip each tofu piece into the zesty wet mixture, then roll it in the dry mixture.
  6. Soak the tofu in soy or almond milk briefly, allowing the flavors to mingle, then dunk it again into the dry mix.
  7. Coat the tofu with panko breadcrumbs, nutritional yeast, fresh herbs, and garlic powder.
  8. Arrange the coated tofu on the prepared baking pan without overcrowding.
  9. Bake for about 25 minutes, flipping halfway through, until golden brown and crispy.
  10. Serve warm with a drizzle of gravy and enjoy.
