Preparation
  1. Slice the eggplants into 1/2-inch thick rounds.
  2. Mix the dry ingredients in a bowl: combine all-purpose flour, corn starch, baking powder, and salt. Gradually stir in water until the batter is smooth.
  3. Dip each eggplant slice into the batter, letting excess drip off.
  4. Coat the battered slices in bread crumbs until completely covered.
  5. Heat the neutral oil in a frying pan over medium heat. Fry the breaded eggplant slices for about 3-4 minutes on each side.
  6. For baking, preheat your oven to 400°F. Place coated slices on a parchment-lined baking sheet and bake for 15-20 minutes, flipping halfway through.
