- Pour peanut oil into a large pan and warm it over medium heat.
- Toss in the minced garlic and sliced onion. Stir occasionally, cooking until fragrant and the onion becomes translucent—about 2-3 minutes.
- Add the thinly sliced chicken to the pan. Cook for about 5-7 minutes or until the chicken is golden brown and fully cooked.
- Mix in your choice of vegetables. Stir-fry for another 3-4 minutes until they become tender yet vibrant.
- In a separate bowl, whisk together oyster sauce, Chinese cooking wine, soy sauce, sesame oil, sugar, chicken stock, and cornflour. Pour this mixture over the chicken and vegetables.
- Finally, add the chow mein noodles into the pan. Toss everything together for about 2-3 minutes until heated through.
