  • 2 cans Canned Artichoke Hearts
  • 3 cloves Garlic minced
  • 2 cups Brussels Sprouts shredded
  • 1 cup Celery diced
  • 1 can White Beans (Cannellini/Great Northern)
  • 1 bunch Fresh Parsley chopped
  • 1 medium Shallot minced
For the Dressing
  • 1/4 cup Extra Virgin Olive Oil
  • 1 tbsp Dijon Mustard
  • 3 tbsp Lemon Juice
  • 1/3 cup Parmesan Cheese grated
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper

How to Make Crispy Air Fried Artichoke Salad
  1. Drain the canned artichoke hearts and white beans thoroughly to ensure they don’t water down your salad. Rinse under cold water for added freshness, then set aside.
  2. Mince the garlic and shallot finely.
  3. Shred the Brussels sprouts and chop the celery and parsley.
  4. Combine all the salad ingredients in a large bowl.
  5. Whisk together the olive oil, Dijon mustard, lemon juice, Parmesan cheese, salt, and black pepper in a separate bowl.
  6. Pour the dressing over the salad mixture and toss to combine.
  7. Air fry the salad ingredients in your air fryer at 375°F (190°C) for about 15 minutes.
  8. Serve immediately while warm and enjoy the fantastic crunch and vibrant flavors!
