How to Make Creamy Zucchini Pasta
  1. In a large skillet, warm the extra-virgin olive oil over medium heat.
  2. Add the diced zucchini and shallots to the skillet. Sauté until tender, about 5-7 minutes.
  3. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Toss the long pasta into the skillet, then pour in the reserved pasta water.
  5. Lower the heat, then mix in the heavy cream, let simmer for 2-3 minutes.
  6. Stir in basil leaves, sea salt, and black pepper.
