Ingredients
  

For the Slaw
  • 2 cups shredded purple cabbage
  • 2 cups shredded white cabbage
  • 1 cup shredded carrot
For the Dressing
  • 1 cup vegan mayo or aioli substitute with regular mayo if not vegan
  • 2 tablespoons apple cider vinegar can substitute with lemon juice
  • 1 tablespoon maple syrup agave syrup is a great alternative
  • 1 tablespoon dijon or brown mustard yellow mustard works too
  • 1 teaspoon fresh cracked pepper
  • to taste sea salt optional

Method
 

Instructions
  1. In a large bowl, mix the shredded purple cabbage, shredded white cabbage, and shredded carrot.
  2. In a separate bowl, whisk together the vegan mayo or aioli, apple cider vinegar, maple syrup, dijon or brown mustard, fresh cracked pepper, and sea salt until smooth.
  3. Pour the creamy dressing over the vegetable mixture and toss until everything is evenly coated.
  4. Allow the coleslaw to sit for at least 30 minutes before serving.
