How to Make Crab Cake Egg Rolls
  1. In a mixing bowl, combine the mayonnaise, Dijon mustard, chili-garlic sauce, and Old Bay seasoning.
  2. Gently fold in the lump crab meat and chopped scallion until well combined.
  3. Sprinkle the panko bread crumbs into the mixture and stir until everything is evenly combined.
  4. Lay out a wonton wrapper on a clean work surface. Place a spoonful of the crab mixture in the center.
  5. Moisten the edges of the wonton wrapper with water to help seal them. Fold over to form an egg roll shape.
  6. Continue with the remaining wonton wrappers and crab mixture until all are filled and sealed.
  7. In a deep frying pan, heat the neutral oil over medium heat.
  8. Carefully fry the egg rolls in batches until golden brown and crispy, about 2-3 minutes per side.
  9. Once fried, remove the egg rolls and place them on paper towels to drain excess oil.
