  • 1 medium Butternut Squash peeled and diced
  • 1 can Diced Tomatoes no need to drain
  • 1 can Black Beans drained and rinsed
  • 1 can Pinto Beans or kidney beans
  • 4 cups Vegetable Broth low-sodium
  • 1 cup Quinoa rinsed
  • 1 medium Yellow Bell Pepper diced
  • 1 can Chipotle Peppers in Adobo adjust for spice preference
Flavor
  • 3 cloves Garlic minced
  • 1 teaspoon Paprika smoked
  • 0.5 teaspoon Cinnamon
  • to taste Salt & Pepper
Garnish
  • 0.25 cup Cilantro chopped

Chili Preparation
  1. In a large pot, heat a small amount of oil over medium heat.
  2. Add the yellow bell pepper and garlic, sautéing until soft and fragrant, about 2-3 minutes.
  3. Stir in the butternut squash, diced tomatoes, black beans, pinto beans, vegetable broth, quinoa, and chipotle peppers.
  4. Add paprika, cinnamon, salt, and pepper, mixing everything well.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes.
  6. Taste your chili and adjust the seasoning if necessary.
  7. Serve your chili hot, garnished with fresh cilantro.
