Preparation Steps
- Combine the Medjool dates, whole cashews, shredded coconut, raisins, orange zest, and kosher salt in your food processor. Pulse until well mixed and forms a sticky dough.
- Continue blending until the mixture is cohesive and smooth yet slightly chunky, about 1-2 minutes.
- Transfer the blended mixture to a bowl and gently fold in chopped cashews, additional shredded coconut, white sesame seeds, and chia seeds.
- Scoop out portions and roll into bite-sized balls, roughly 1 inch in diameter.
- Line a baking sheet with parchment paper and place the energy bites on it without touching.
- Refrigerate for at least 120 minutes to firm up the bites.
