How to Make Classic Crumpets
- In a large mixing bowl, whisk together the plain flour, strong white bread flour, fast-action dried yeast, caster sugar, and salt until evenly combined.
- Gradually pour in the lukewarm water and milk into the dry mixture. Stir gently until everything is well blended and smooth.
- Cover the bowl with a clean kitchen towel and place it in a warm spot. Allow the mixture to rest for about 60 minutes, or until it doubles in size.
- Once risen, sprinkle in the bicarbonate of soda and gently fold it into the batter.
- Preheat your griddle or frying pan over low to medium heat.
- Carefully grease the crumpet rings and place them on the griddle. Pour enough batter into each ring to fill them halfway.
- Cook the crumpets until bubbles form on the surface and the batter has set, about 10 minutes.
- Gently remove the rings and flip the crumpets to cook the other side for a few more minutes, until they’re golden brown.
