  • 1 tsp Bicarbonate of Soda This will help aerate the batter, giving those crumpets their iconic texture.

Method
 

How to Make Classic Crumpets
  1. In a large mixing bowl, whisk together the plain flour, strong white bread flour, fast-action dried yeast, caster sugar, and salt until evenly combined.
  2. Gradually pour in the lukewarm water and milk into the dry mixture. Stir gently until everything is well blended and smooth.
  3. Cover the bowl with a clean kitchen towel and place it in a warm spot. Allow the mixture to rest for about 60 minutes, or until it doubles in size.
  4. Once risen, sprinkle in the bicarbonate of soda and gently fold it into the batter.
  5. Preheat your griddle or frying pan over low to medium heat.
  6. Carefully grease the crumpet rings and place them on the griddle. Pour enough batter into each ring to fill them halfway.
  7. Cook the crumpets until bubbles form on the surface and the batter has set, about 10 minutes.
  8. Gently remove the rings and flip the crumpets to cook the other side for a few more minutes, until they’re golden brown.
