  • 1 teaspoon vanilla extract brings a warm, comforting flavor.
  • 0.25 teaspoon peppermint extract optional, enhances the holiday spirit with a cool flavor.
For Decorating
  • 1 bottle red and green gel food coloring adds color and festive cheer.

Method
 

Preparation
  1. Preheat the oven to 200°F (93°C) and line a baking sheet with parchment paper.
  2. In a clean mixing bowl, vigorously beat the egg whites until frothy.
  3. Sprinkle in the cream of tartar and continue beating until soft peaks form.
  4. Gradually add the sugar, one tablespoon at a time, while beating continuously until stiff peaks form.
  5. Mix in the vanilla extract and peppermint extract, if using.
  6. Divide the meringue and add red and green gel food coloring to create swirls.
  7. Dollop or pipe the meringue onto the baking sheet, spacing them about 1 inch apart.
  8. Bake for 90 minutes until crisp and dry to the touch.
  9. Turn off the oven and let the meringues cool completely inside the oven.
