Preparation
- Preheat the oven to 200°F (93°C) and line a baking sheet with parchment paper.
- In a clean mixing bowl, vigorously beat the egg whites until frothy.
- Sprinkle in the cream of tartar and continue beating until soft peaks form.
- Gradually add the sugar, one tablespoon at a time, while beating continuously until stiff peaks form.
- Mix in the vanilla extract and peppermint extract, if using.
- Divide the meringue and add red and green gel food coloring to create swirls.
- Dollop or pipe the meringue onto the baking sheet, spacing them about 1 inch apart.
- Bake for 90 minutes until crisp and dry to the touch.
- Turn off the oven and let the meringues cool completely inside the oven.
