Preparation
- Cut the boneless pork butt into 1-inch thick chunks.
- In a large bowl, combine minced garlic, sugar, sea salt, five spice powder, ground white pepper, Shaoxing wine, hoisin sauce, ground bean sauce, ketchup, pineapple juice, sesame oil, and optional red food coloring. Stir until well mixed.
- Add the pork pieces to the marinade, ensuring they're well coated. Cover and refrigerate for 120 minutes.
- Preheat your oven to 375°F (190°C).
- Transfer the marinated pork to a roasting tray, reserving any remaining marinade. Roast in the oven for about 30 minutes, or until the pork is fully cooked.
- Once done, brush the ribs with maltose or honey for a glossy finish. Place back in the oven for a few minutes.
