How to Make Chile Colorado Beef Stew
- Toast the chiles in a dry skillet over medium heat until fragrant, about 2-3 minutes.
- Transfer the toasted chiles to a bowl and cover them with hot water. Let soak for 15-20 minutes.
- In a blender, combine the soaked chiles, yellow onion, garlic, oregano, and cumin. Blend until smooth.
- In a large pot, heat olive oil over medium heat. Add the beef stew meat and brown on all sides for about 5-7 minutes.
- Sprinkle the flour over the browned beef and mix well to coat.
- Pour the blended chile sauce over the beef, followed by the beef broth, bay leaf, kosher salt, and black pepper. Stir well.
- Bring to a boil, reduce heat to low, cover and let simmer for 60 minutes.
- Adjust seasoning with any remaining kosher salt before serving.
