How to Make Chile Colorado Beef Stew
  1. Toast the chiles in a dry skillet over medium heat until fragrant, about 2-3 minutes.
  2. Transfer the toasted chiles to a bowl and cover them with hot water. Let soak for 15-20 minutes.
  3. In a blender, combine the soaked chiles, yellow onion, garlic, oregano, and cumin. Blend until smooth.
  4. In a large pot, heat olive oil over medium heat. Add the beef stew meat and brown on all sides for about 5-7 minutes.
  5. Sprinkle the flour over the browned beef and mix well to coat.
  6. Pour the blended chile sauce over the beef, followed by the beef broth, bay leaf, kosher salt, and black pepper. Stir well.
  7. Bring to a boil, reduce heat to low, cover and let simmer for 60 minutes.
