How to Make Chicken Stew
- Heat the olive oil and butter in a large pot over medium heat until the butter melts.
- Add the yellow onion, celery, and carrots, and sauté until softened, about 5-7 minutes.
- Stir in the garlic and cook until fragrant, about 1 minute.
- Add the chicken thighs to the pot and cook until browned on all sides, roughly 6-8 minutes.
- Sprinkle the all-purpose flour over the chicken and vegetables, stirring to coat.
- Gradually add the chicken broth and vegetable broth, stirring well.
- Add the baby potatoes, dried parsley, thyme, rosemary, sage, and black pepper. Bring to a boil.
- Reduce heat and let it simmer for 30 minutes until chicken is cooked through and potatoes are tender.
- Stir in the fresh parsley before serving for a burst of freshness.

Notes
For best results, allow simmering for the full 30 minutes and adjust seasoning as needed before serving.
