  • 2 pieces 10-inch Tortillas Feel free to swap with whole wheat or gluten-free.
  • 1 cup Monterey Jack Cheese Melted, cheddar can be a substitute.
  • 1 cup Cooked Chicken Sliced or shredded, use rotisserie for quick prep!
  • 1 piece Avocado Make sure it’s ripe for the best flavor.
  • 0.25 cup Salsa Verde Your favorite salsa can also work.
  • 0.25 cup Cilantro Freshly chopped, use parsley if desired.

How to Make Chicken and Avocado Quesadillas
  1. Heat the skillet: Start by placing a skillet over medium heat.
  2. Layer the first tortilla: Lay one tortilla in the pan, sprinkle half of the shredded Monterey Jack cheese on top.
  3. Add the fillings: Place the cooked chicken, avocado slices, salsa verde, and cilantro over the cheese.
  4. Top with cheese and tortilla: Sprinkle the remaining cheese on top and cover with the second tortilla.
  5. Cook until golden: Let it cook for about 4-5 minutes until the bottom tortilla is golden brown.
  6. Flip the quesadilla: Carefully turn the quesadilla over and cook for another 4-5 minutes.
  7. Serve and enjoy: Remove the quesadilla from the skillet, cut into wedges, and serve warm.
