Instructions
  1. Heat the oil in a pan over medium heat until shimmering.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the crushed garlic and grated ginger. Cook for another minute.
  4. Add the mild curry powder and stir to combine.
  5. Toss in the finely chopped red and yellow peppers, and grated carrots. Sauté for about 5 minutes.
  6. Pour in the tomato purée and chopped tomatoes, mixing well.
  7. Stir in the fresh thyme and baked beans, combining all ingredients.
  8. Season with salt and pepper to taste.
  9. Allow the mixture to simmer for 15-20 minutes, stirring occasionally.
