For the Sauce
  • 5 pcs large onions Caramelize them slowly for best flavor.
  • 3 tbsp olive oil Essential for sautéing the onions.
  • 180 g vegan cream cheese Provides richness.
  • 50 g vegan parmesan cheese Adds savory flavor.
For Seasoning
  • salt Season to taste.
  • black pepper Add a dash for warmth.
For Garnishing
  • fresh parsley Chopped, for color and freshness.
  • chili oil Drizzle for added richness.

Method
 

Directions
  1. Heat the olive oil in a large pan over medium heat. Add the sliced onions and cook gently, stirring occasionally, until golden brown, about 25-30 minutes.
  2. Once the onions are caramelized, add the cooked pasta and reserved pasta water. Toss until the pasta is well coated.
  3. Stir in the vegan cream cheese and vegan parmesan cheese until melted smoothly, creating a creamy sauce.
  4. Season with salt and black pepper to taste, adjusting to balance flavors.
  5. Serve the pasta, garnished with chopped parsley and a drizzle of chili oil.
