  • 1/4 cup neutral oil
  • 2 tablespoons fresh lime juice
  • 2 tablespoons lemon vinegar
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon agave syrup can substitute with honey
  • 1 teaspoon sambal oelek use less for milder dressing
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
Salad
  • 4 cups thinly sliced red cabbage
  • 2 tablespoons lemon vinegar used again
  • 1 tablespoon cane sugar
  • 1 teaspoon kosher salt to taste
  • 1 large golden beet grated
  • 1 cup celery root grated
  • 1/4 cup fresh chopped parsley
  • 1 cup pomegranate arils for garnish

Method
 

Preparation
  1. In a large bowl, whisk together the neutral oil, fresh lime juice, lemon vinegar, grated ginger, agave syrup, sambal oelek, salt, and black pepper.
  2. Add the thinly sliced red cabbage, lemon vinegar, cane sugar, kosher salt, grated golden beet, grated celery root, parsley, and pomegranate arils to the bowl.
  3. Using tongs or your hands, toss all the ingredients together until well coated in the dressing.
  4. Taste your salad and adjust the seasoning with more salt and black pepper if needed.
  5. Serve immediately for the freshest taste, or refrigerate until you're ready to serve.
