Preparation Steps
  1. Preheat your oven to 350°F (175°C). Prepare an 8x8-inch baking dish by greasing it lightly.
  2. Combine the mixed berries, 2 tablespoons of sugar, lemon juice, and cornstarch in a bowl. Let them sit to release their juices.
  3. Mix the graham cracker crumbs, 2 tablespoons of sugar, and melted butter until combined. Press into the bottom of the baking dish.
  4. Beat together cream cheese, sour cream, egg, vanilla extract, and lemon zest until smooth, about 2-3 minutes.
  5. Spread the cream cheese mixture evenly over the crust in the baking dish.
  6. Dollop spoonfuls of the berry mixture on top and swirl gently with a knife.
  7. Bake for 18 minutes until set but slightly jiggly. Let cool on a wire rack.
  8. Chill in the refrigerator for at least 2 hours before serving.
