Preparation Steps
- Preheat your oven to 350°F (175°C). Prepare an 8x8-inch baking dish by greasing it lightly.
- Combine the mixed berries, 2 tablespoons of sugar, lemon juice, and cornstarch in a bowl. Let them sit to release their juices.
- Mix the graham cracker crumbs, 2 tablespoons of sugar, and melted butter until combined. Press into the bottom of the baking dish.
- Beat together cream cheese, sour cream, egg, vanilla extract, and lemon zest until smooth, about 2-3 minutes.
- Spread the cream cheese mixture evenly over the crust in the baking dish.
- Dollop spoonfuls of the berry mixture on top and swirl gently with a knife.
- Bake for 18 minutes until set but slightly jiggly. Let cool on a wire rack.
- Chill in the refrigerator for at least 2 hours before serving.
