For the Beef
  • 3-4 pounds Chuck roast untrimmed meat
  • 2 pieces Chipotle peppers in adobo sauce
  • 1 large Onion sliced
For the Juicy Marinade
  • 1/4 cup Lime juice
  • 1/4 cup Orange juice
  • 1 can Diced tomatoes
  • 1 can Green chiles
  • 2 cups Beef stock or broth
For the Flavor Boost
  • 2 leaves Bay leaves
  • 2 teaspoons Garlic powder
  • 2 teaspoons Ground cumin
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • 1 teaspoon Chili powder
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
For Assembly
  • 12 pieces Corn tortillas
  • 1/4 cup Cilantro minced
  • 1 cup Radishes sliced
  • 1 cup Shredded cabbage
  • 1/2 cup Cotija cheese or queso fresco
  • 1 cup Salsa roja

Method
 

How to Make Barbacoa Beef
  1. Season the chuck roast generously with kosher salt and freshly ground black pepper.
  2. Layer the sliced onion, chipotle peppers, diced tomatoes, green chiles, lime juice, orange juice, beef stock, garlic powder, ground cumin, onion powder, paprika, chili powder, and bay leaves into the slow cooker.
  3. Cook on low for about 5 hours or until the beef is tender and easily shreds with a fork.
  4. Remove the bay leaves carefully before shredding the beef.
  5. Serve the shredded beef inside warm corn tortillas, and top with minced cilantro, sliced radishes, shredded cabbage, Cotija cheese, and salsa roja.
