How to Make
- Cut the medium eggplant into half moons and sprinkle with salt. Let it sit for 15 minutes to draw out moisture.
- In a bowl, combine the prepared eggplant with olive oil, garlic powder, cumin, chili powder, and smoked paprika. Toss to coat evenly.
- Set your air fryer to 400°F (200°C) and let it warm up.
- Place the seasoned eggplant in the air fryer basket and cook for 12-15 minutes, shaking the basket halfway through.
- While the eggplant is frying, warm the flour tortillas either in a separate pan or directly in the air fryer for about a minute.
- Take a warm tortilla and add the air-fried eggplant, followed by the toppings like pickled red onions, jalapenos, salsa, guacamole, and crumbled cheese.
