Ingredients
  

Base
  • 1 cup tomato sauce or diced tomatoes
  • 1/2 cup natural creamy peanut butter
  • 2 tablespoons cooking oil
Aromatics
  • 1 medium chopped onion
  • 3 cloves minced garlic
  • 1 tablespoon grated fresh ginger or ground ginger
Seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon sea salt or kosher salt
  • 1/2 teaspoon black pepper
Vegetables
  • 1 pound stew meat
  • 2 medium cubed sweet potatoes
  • 2 medium sliced carrots
  • 2 cups spinach leaves or baby spinach
Broth
  • 4 cups broth

Method
 

Cooking Instructions
  1. In a large pot, heat the cooking oil over medium heat until shimmering.
  2. Add the chopped onion and minced garlic; sauté until the onion turns translucent, about 5 minutes.
  3. Add the grated ginger, smoked paprika, ground coriander, cayenne pepper, sea salt, and black pepper; stir well for about a minute to toast the spices.
  4. If desired, add the stew meat and brown on all sides, which should take around 5-7 minutes.
  5. Stir in the tomato sauce, peanut butter, and broth; mix until fully combined.
  6. Toss in cubed sweet potatoes and sliced carrots; bring to a boil.
  7. Reduce the heat, cover, and let simmer for 45 minutes, or until the vegetables are tender.
  8. Stir in spinach leaves and cook for an additional 5 minutes until they are just wilted.
  9. Taste and adjust seasoning as needed before serving.
