- Preheat the pan and add sesame oil.
- Sauté chopped red chilli, minced garlic, and ground ginger for 1-2 minutes.
- Mix honey, dark soy sauce, and lime juice; stir until thickened.
- Sprinkle cornflour over sea bass fillets to coat.
- Cook fillets skin-side down for 4 minutes until crispy.
- Flip fillets; cook for 4 minutes while spooning sauce over.
- Garnish with coriander and spring onions; serve with lime slices.
